Restaurant Aroma

My name is Pasquale Carfora and I am from Italy. I grew up on the coast of Sabaudia in the Lazio region, south of Rome. Here I lived partly with my parents, partly on my grandparents' farm. Very early on I came into contact with the typical southern Italian cuisine here. On the farm, old, traditional dishes were prepared with ingredients straight from the land. Pure and fresh. My mother also worked as a chef in an Italian seaside resort, which also brought me into contact with the professional kitchen. This early phase shaped the rest of my life, because even then I decided to dedicate my life to cooking. For me, the harmony in my dishes symbolizes the harmony I have found in my life between Italy and the Netherlands, between the different cultures and cooking styles. In the Aroma restaurant I hope to honor all those important people in my life who have brought me here. To all my teachers and especially Jacob Jan Boerma, who taught me so much. To my parents-in-law Jan and Paola and my Elisa, with whom I am embarking on this enormous adventure. And of course to my parents and grandparents, who taught me the love of cooking so many years ago.

Ben Lobos, a highly experienced cocktail bartender in the Netherlands, has built an impressive career in the hospitality industry. His passion for the industry started at an early age when he started working in his father's restaurant. One of his fondest memories is winning the prestigious Diageo World-Class Netherlands competition in 2018, also coming in an honorable 13th place in the global competition. Onno Kokmeijer developed a passion for the culinary world at an early age. He has acquired valuable knowledge by working with leading chefs and their restaurants, which he still uses as the basis for his dishes. In 2003 he started his career at Ciel Bleu**, where he developed his own culinary signature. His interest in Dutch products evolved into a passion for international ingredients from various regions worldwide. He led the kitchen of Ciel Bleu** with a strong focus on mentoring young aspiring chefs. Peter Lute

Peter and Marieke started their first restaurant in Ouderkerk aan de Amstel more than 20 years ago. Peter has previously worked in various restaurants, from brasserie, hotels to star establishments, and has developed his own unique style. LUTE currently consists of the restaurants De Kruidfabriek in Ouderkerk aan de Amstel and GREEN on the 26th floor of the striking Valley building in Amsterdam. We are quite proud of what it says. Robert Kranenborg

Robert JK Kranenborg (1950) has an impressive track record in the culinary world. He enjoyed a privileged education as a traditional chef, with a focus on both French and international Dutch cuisine.
