The menu
Klein kaasje gemaakt van rauwe schapenmelk. Deze kaas is enkel te verkrijgen tijdens de lente en de zomer. Dan geven de schapen voldoende melk die ze ook kunnen gebruiken om kaas van te maken. Stevig en droog van structuur met een zeer kruidige smaak. Heel herkenbaar is de smaak van lavendel en oregano in dit kaasje. Ingedroogde korst door rijping in de speciale droge rijpingsruimte.
De Macendré is een rauwmelkse geitenkaas gemaakt door Hanneke Kuppens. Hanneke is een van de grondleggers van rauwmelkse geitenkaas in Nederland en maakt al zo’n 30 jaar ambachtelijke geitenkaas op haar kaasmakerij De Oude Streek in Zevenhuizen op de grens met de provincies Drenthe, Groningen en Friesland. De Macendré is een kaasje van 100 gram, smeuïg en met een witschimmel waarna de korst weer bewerkt wordt met as. In het begin zacht en romig en naar mate de kaas verder affineert krijgt hij een sterkere smaak.
Gemaakt als tegenhanger van de bekende Herve uit de omgeving van Luik. Het Achels blokje wordt gemaakt door Peter Boonen op kaasmakerij Catharinadal van verse rauwe melk en wordt tijdens de rijping gewassen met pekelwater en het bekende Achelse bier. In tegenstelling tot de Herve kaas is deze iets minder zout en uitgesproken.
Op het Waddeneiland Texel waar voornamelijk schapen leven hebben ze ook een paar “verdwaalde” koeien. Van de melk van deze koeien maakt kaasmakerij Wezenspyk een hele mooie oude boerenkaas, de Texels Rustiek. 2 jaar oud, een duidelijk rijpingskristal maar nog met een mooie smeuïgheid dus geen strakke en droge harde type Gouda maar nog heerlijk eetbaar en verteerbaar.
De Jersey Blue is Willi Schmid's meest gedecoreerde product: Het boterachtige gevoel van de Jersey-melk bedekt het gehemelte en vervolgens barsten de krachtige smaken van de schimmel uit. Het heeft een ongelooflijk lange nasmaak. De Jersey Blue kan jong worden gegeten, maar wordt goed ouder. Natuurlijk worden de smaken scherper wanneer hij wat droger wordt.
