The menu
The Candied Duck Legs are cooked in their own duck fat. We heat the legs for 40 minutes at 140 degrees to get the skin nice and crispy again. Candied duck legs, also called Confit de Canard, is a classic French dish that Johan perfected at a young age in Paris. Every duck used by Chateaubriand comes from small farms in the Vendée region, where they are cared for with passion.
This Potato Truffle Muslin (C) is made with Italian extra virgin olive oil, Dutch cow's milk and black truffle. All these ingredients give the mashed potatoes have a delicious refined taste. This mousseline goes in the oven for 40 minutes to make it nice and gratinated.
These terracotta containers contain a creamy dish of chicory, handmade béchamel sauce and artisanal, homemade ham from the Zuiderzee pig. The meat of Zuiderzeevarkens is delivered in a safe and secure manner produced and stored in an environmentally friendly manner traditionally processed by local wholesaler and butchers. Through collaboration with We work with our neighbor sow farmer Sjaak a local cycle and our product is complete traceable. We also add gruyère alpage, for the creaminess, gruyère alpage is made exclusively with milk from the cows at the highest point of the Alps, for extra flavour of the young blades of grass.
This apricot sauce is filled with fresh apricots and is made according to Grandma Teekens' traditional family recipe This sauce goes well with the duck and adds a nice color accent to the meal.

Chateaubriand is a warm and close-knit family business with a long history, the Teekens family has 4 generations of butchers. In the beginning they were mainly concerned with meat, but over the years the chefs of Chateaubriand have specialized in the catering profession. The store is located in Heemstede and Chateaubriand's chefs have more than 20 years of experience in creating classic Dutch and French recipes. They only work with the best local suppliers and ingredients to ensure quality and tasty meals.
