The menu
“My menu reflects the traditions with which every meal begins: bread and oil. Therefore I chose to serve this crispy bread, made with 50 percent whole wheat flour, with the local extra virgin olive oil from Terracina. But I also wanted to add something that was whole specifically brings back memories of my youth. That's why we have warm focaccia combines great with lemon butter and anchovies from Cetara. This is one, so to speak nod to the Amalfi Coast and it was also my favorite snack grandfather Domenico.”
“In this appetizer I see my childhood in Agro Pontino, an area south of Rome in the middle of a national park. Water buffalos are among the most commonly kept animals here only for their milk from which cheese (particularly mozzarella) is made, but also for the meat that is consumed in different ways. That's why this bresaola accompanied by pumpkin in different shapes and sauce of pecorino romano DOP.”

Of course it is my own creative interpretation, supported by my own limoncello, made with Italian ingredients, for some extra shine to this traditional dessert.”
About Restaurant Aroma
My name is Pasquale Carfora and I am from Italy. I grew up on the coast of Sabaudia in the Lazio region, south of Rome. Here I lived partly with my parents, partly on my grandparents' farm. Very early on I came into contact with the typical southern Italian cuisine here. On the farm, old, traditional dishes were prepared with ingredients straight from the land. Pure and fresh. My mother also worked as a chef in an Italian seaside resort, which also brought me into contact with the professional kitchen. This early phase shaped the rest of my life, because even then I decided to dedicate my life to cooking. For me, the harmony in my dishes symbolizes the harmony I have found in my life between Italy and the Netherlands, between the different cultures and cooking styles. In the Aroma restaurant I hope to honor all those important people in my life who have brought me here. To all my teachers and especially Jacob Jan Boerma, who taught me so much. To my parents-in-law Jan and Paola and my Elisa, with whom I am embarking on this enormous adventure. And of course to my parents and grandparents, who taught me the love of cooking so many years ago.

Of course you have to go into the kitchen yourself to do the minimum of preparation, but it is also nice that you can make these beautiful creations on the plate yourself. Recommended!”
