Over Maison TêT
Maison TêT is een familiebedrijf dat rechtstreeks Kampot Peper uit Cambodja importeert naar Europa. Opgericht door Tjarco van Raad en verder uitgebouwd met zijn zoon Yanou, zijn ze toegewijd aan het introduceren van de culinaire wereld aan deze bijzondere peper. Kampot Peper, met een geschiedenis die teruggaat tot de 13e eeuw, heeft de tand des tijds doorstaan. Geworteld in eeuwenoude landbouwtradities, weerspiegelt deze peper de rijke geschiedenis en cultuur van het Cambodjaanse volk. "Tijdens ons bezoek aan de boerderijen in Kampot werden we diep geraakt door de gastvrijheid van de mensen en de schoonheid van het land. De uitzonderlijke smaken en aroma's van deze prachtige pepers wilden we delen met een breder publiek. De onberispelijke kwaliteit van de pepers is te danken aan zowel hun rijke historie als het vakmanschap van de lokale boeren."
Deze peper wordt al sinds de 13e eeuw op dezelfde biologische manier verbouwt. De Rode Kampot peper, ook wel bekend als de “flagship” van de Kampot pepers. De regio Kampot is een van de weinige regio's ter wereld die deze exclusieve rode peperkorrels produceert. De rode bessen zijn zeer fragiel en vereisen zorgvuldige behandeling voordat ze aan het einde van het seizoen klaar zijn om geselecteerd te worden. Na dit nauwkeurige proces worden alleen de volledig rijpe rode bessen handmatig geplukt. Daarna worden de rode bessen gewassen en 2-3 dagen in de zon gedroogd.
Tijdens de laatste productiefase mogen alleen de superieure korrels die aan de PGI-standaard voldoen, als 'Rode Kampot peper' worden verkocht.

Of course you have to go into the kitchen yourself to do the minimum of preparation, but it is also nice that you can make these beautiful creations on the plate yourself. Recommended!”
