Geheel handbereid. Deze gezeefde tomaten zijn een authentiek product uit Puglia. Het bevat geen toevoegingen, geen zout geen suiker en geen serum. Niets, alleen gezeefde handgeselecteerde tomaten en wat verse basilicum uit de Ofanto vallei nabij Cerignola in Puglia
Een typische Gragnano-pastavorm, welke voornamelijk gebruikt wordt in combinatie met peulvruchten zoals bonen en linzen. Alle pastavormen van Pastificio Gentile zijn in brons geslepen, wat betekent dat de mallen die bij de productie gebruikt worden van brons zijn gemaakt. De bronzen mallen zorgen voor een ruwere, meer poreuze pasta. Met als gevolg een zelfgemaakte kwaliteit.
Gentile maakt artisanale pasta sinds 1876. Oortjespasta in dit geval, maar dan de Napolitaanse versie uit de pastahoofdstad van de wereld Gragnano (nabij Napels). Voor de bereiding wordt de bijzonder gezonde graansoort gebruikt 'senatore cappelli'. Er wordt gewerkt met koperen mallen omdat die, net als brons, zorgen voor een ruw pasta-oppervlak waardoor sauzen goed hechten. De pasta wordt op natuurlijke wijze gedroogd. In 2015 in La Repubblica uitgeroepen tot nummer 58 in de top 100 van meest geliefde Italiaanse merken.
De Vesuvio pasta is vernoemd naar de nog steeds actieve vulkaan bij de stad Napoli. Een korte gekrulde pasta die veel voorkomt in de zuidelijke regio van Campania. De talloze hoekjes en gaatjes maken het een geweldige match met dikke sauzen.
