Het menu
Door 3 Michelinsterren bekroonde chef Massimo Bottura geproduceerde aceto balsamico. Gemaakt van lokale trebbianodruiven volgens een 100 jaar lange familie traditie. Gerijpt in eiken-, kastanje- en jeneverbessenhout vaten gedurende 12 tot 20 jaar. Donker van kleur met een vleugje amber.
Olijfolie, speciaal gemaakt om de azijnen van Villa Manodori te complimenteren! De hand geplukte en koud geperste olijven geven een pittige olie met tonen van groene tomaat. Deze olijfolie wordt veelvuldig gebruikt in de keuken van Osteria Francescana!
De biologische versie van het 12 jarige broertje. De balsamico heeft geen 12 jaar rijping, maar zit rond de 6 jaar. Hierdoor is deze minder stroperig, met wel een intense smaak door de rijping op eiken-, kastanje- en jeneverbessenhout.
Over Massimo Bottura
Massimo Bottura opende in 1995 Osteria Francescana in Modena. Al vijfentwintig jaar een vernieuwende restaurateur, in 2019 opgenomen in de lijst van Time magazine's meest invloedrijke mensen ter wereld, Bottura heeft de zijne geconsolideerd reputatie als een van de meest creatieve culinaire figuren ter wereld. Zijn internationaal gerenommeerde restaurant met drie Michelinsterren kreeg de naam nummer 1 op de lijst van ‘s werelds 50 beste restaurants in 2016 en 2018, en momenteel is het onderdeel van de Best of the Best-lijst. Om zijn nalatenschap uit te breiden, begon Bottura Aceto Balsamico te bottelen onder de naam van Villa Manodori, dat nu een verzameling is van een breed scala aan de beste specerijen gebruikten zijn keukens. Hij besloot een ander restaurant te openen in Modena, Franceschett58, een informeel restaurant bistro waar je plezier kunt hebben bij het benaderen van de lokale keuken met een ironische en eigentijdse draai.

Of course you have to go into the kitchen yourself to do the minimum of preparation, but it is also nice that you can make these beautiful creations on the plate yourself. Recommended!”
