An Enchanting Adventure at Can Gelat: Heleen's Story Imagine: you are the winner of a luxurious all-inclusive trip where you get to enjoy a wonderful stay in Mallorca, and then be immersed in the finest gastronomy and wines from the estate's own vineyard – hosted by none other than two Michelin-star chef Martin Kruithof. For many people, this is a far-off dream, but last month this dream became reality for Heleen and her partner after they became the big winners of our largest giveaway to date last year. We spoke with Heleen after her return from her culinary journey in Mallorca, and this is her story. We were pampered from the very start. The trip couldn't have started better. “We already met Martin Kruithof in the morning at the airport, we were on the same flight to Mallorca and got to chat for a bit. That was already quite special, standing one-on-one with a two Michelin-star chef. After a short flight, we were warmly welcomed at the Mallorca airport by Wim, the owner of Can Gelat, who took us in his jeep to a secluded oasis amidst lush vineyards. This was the start of my unforgettable journey to the culinary sanctuary,” Heleen says. Heleen continues: “As the lucky winners of the Bearleaders giveaway, my partner and I were welcomed with open arms by Hilly and the talented chefs Martin Kruithof and host Mourik. Upon arrival at the accommodation, we were immediately pampered and Hilly treated us to a delicious cup of coffee and a piece of cake, making us feel right at home—a great start to our culinary journey.”  When we ask Heleen about the highlights of the trip, she answers enthusiastically: “Every day was a succession of culinary highlights and warm hospitality. After Hilly’s delicious cakes, that afternoon we enjoyed a wonderful paella prepared by Mourik, and tasted the first wines from Can Gelat’s own vineyard. The evening was inaugurated with fantastic live music from a Spanish singer and guitarist, while we enjoyed flavorful homemade tapas and a glass of wine. It felt as if we were part of an exclusive family gathering, where everyone was connected by a shared love of good food and great conversations.” “The following days we went to the winery Can Axartell where we had a guided tour. Every occasion revolved around delicious food and the finest wines. We also went to a local market in Palma, where they sold the tastiest fresh products. You could also enjoy delicious tapas there and really taste anything you wanted. There was such a cozy atmosphere!” says Heleen. “The historic city center is also truly beautiful, after we had gathered all the ingredients for that evening’s dinner, we went to the old city center and saw the finest and most beautiful spots of Palma.” It quickly felt like home. “During our stay, we quickly felt at home and soon found a regular morning routine. We started the day with a refreshing dip in the pool, after which we all helped with the preparations for breakfast. After a delicious breakfast, Bob and I would then bring the leftover vegetable peels from the previous day to the sheep on the property. Of course, when you’re with a group of strangers, it can take a little getting used to at first, but it soon felt like one big family.”“Another highlight of my trip was undoubtedly the time I spent in the kitchen with chef Martin Kruithof. While I expected to just watch here and there, I was actually immediately invited to help and learn as he created his culinary masterpieces. It was a privilege to see up close how he transformed local ingredients into delicious dishes, and I will always cherish this experience.”“What might stay with me the most is the special moment when my friend Bob was cleaning lobster in the kitchen, while Martin and Maurik watched and joked that they were Bob’s sous-chefs. It was a hilarious and touching moment that perfectly illustrated the family atmosphere of Can Gelat.” What will stay with me forever… “My time at Can Gelat was a very special journey full of culinary indulgence and precious memories that I will cherish forever. It was an experience that only strengthened my love for travel, good food, and new encounters. I can't wait to one day return to that idyllic place in Mallorca. What a wonderful place!”

Dining out at home in your pajamas? According to Susan, yes you can. The way to the heart is through the stomach. Susan knows this better than anyone. In the podcast Smaakmakers, she dives into the world of food & drink together with podcast creator Zegert. Susan had previously tried a menu from SOUS in the past. She says: “I ordered the BBQ menu then, with the finest meats and various tasty side dishes, super fun to do with friends – there’s really plenty included!” Last weekend she experienced a restaurant dinner at home. “Our child was staying over elsewhere. I lit the candles and planned a date night with my partner. I picked out the Surf & Turf menu on SOUS. How is Easter celebrated worldwide? And what is eaten? It's only a few days until Easter. That of course means we're looking forward to all the delicious food that comes with it! You imagine that wonderful Easter breakfast, the Easter eggs, and of course being together with family and friends. That's what Easter is all about, whether it's an elaborate dinner or a relaxed Easter brunch. In the Netherlands, we enthusiastically go searching for Easter eggs again, which are, of course, cheerfully decorated first. In the evening, we can relax by a cozy Easter fire, enjoying each other's company and the warmth of the moment. Besides our traditions, every country has its own customs when it comes to Easter. Spain, Greece, and Sweden In countries like Spain and Latin America, sweet breads and cakes are traditional during Easter. Greece celebrates with a special meal after mass, where magiritsa, a soup based on avgolemono, plays a starring role. And the whole family comes together on Easter Sunday to enjoy spit-roasted lamb. It's also common for Brazilians to enjoy filled Easter eggs and traditional dishes like bacalhau, salted cod, during Easter. Meanwhile, in Sweden, people enjoy a festive meal with smoked salmon and Jansson's Temptation. Italy According to the Italians, the saying goes 'Natale con i tuoi, Pasqua con chi vuoi,' meaning Christmas you celebrate with family, Easter with whomever you want. In Italy, Easter is often celebrated outdoors, with everyone welcome to join a delicious picnic on Pasquetta, Easter Monday. Besides Easter eggs, you'll find colomba pasquale everywhere. This sweet cake is somewhat similar to the panettone eaten at Christmas. England During Easter, we also decorate our homes and set the table with the cheerful colors associated with Easter. The tradition of decorated Easter branches originally comes from England, introduced by Queen Victoria. For dinner, the English traditionally eat lamb during the Easter meal. The English also love hot cross buns with tea or coffee. They look like currant buns, but with icing on top and are a bit sweeter. Simnel cake often appears on the table as well, a tradition from the Middle Ages. It's a fruity cake with marzipan on top.  Germany Our eastern neighbors often decorate their homes with colored chocolate eggs and Easter bunnies. For Easter, they organize Easter markets with beautiful decorations and delicious food. The Easter celebration already begins on the Thursday before, with a traditional breakfast of ham, sausage, and eggs, and for dinner, roasted lamb with asparagus and potatoes, or beef with potato dumplings, red cabbage, spring peas, and carrots is eaten. Czech Republic Traditional Czech Easter meals consist of a wide range of seasonal specialties. Easter bread, or Mazanec as it is locally called, is an absolute must in Czech households. Lamb, rolls, eggs, and roasted ham are also common and are best eaten as a main course with traditional side dishes such as sauerkraut and dumplings. Especially in a world where everything changes quickly, it is important to embrace and cherish traditions. Whether it's sharing family recipes that have been passed down for generations or celebrating centuries-old cultural festivities; traditions form an essential part of our lives.  It is valuable to preserve the customs of the past, but we can also consciously start new traditions, or give existing traditions a new twist. Chef Terry: "From my passion for art, my love for cooking eventually emerged, although it wasn't love at first sight!" In the culinary search for what drives chefs, we join ‘SOUS Stories’ at their table and discuss their path to success. This time, we sit down with Restaurant STER in Rotterdam. With Terry Priem, we talk about his passion for cooking, his love for Tuscany, but also: which kitchen gadget he considers indispensable. The name STER comes from Terry's graffiti period. “STER was my tag name on my graffiti pieces. In addition, our daughter is named Nova, which stands for new star, and the letters STER can also be found in my first name and in Esther's,” says Terry. Terry continues: “In the past, I made graffiti pieces along the highways and all around Rotterdam and Kralingen. From my passion for art, my love for cooking eventually emerged, although it wasn't love at first sight!” Terry once started as a dishwasher in the kitchen and from there gradually swapped the dishwashing area for a chef's jacket. “The colors I used in my graffiti pieces and their contrasts can be seen in the dishes we serve at STER. Just like graffiti, my signature is bringing together harmonious flavors and colors on the plate, as well as the bold and playful accents.” In March 2019, Terry and Esther opened Gastrobar STER. It was soon time to celebrate, as the restaurant received the coveted Bib Gourmand from the critical Michelin Guide. This distinction recognizes the restaurant's excellent value for money. Last year they opened their second restaurant, also in Rotterdam. Restaurant STER accommodates 55 guests and raises the culinary standard compared to Gastrobar STER. "We have kept the bold atmosphere, but our fine-dining restaurant serves more refined dishes and richer ingredients," Terry explains. "We also have a beautiful cheese cart, made especially for us, and a special wine list with Super Tuscans from Bolgheri. This was a long-cherished dream come true." Upon entering, the special corner for Terry and Esther's favorite wine region immediately stands out. “In our wine cabinet, you'll find big names like Sassicaia and Ornellaia and about 60 other wine producers from that small but oh so beautiful area, which we love to highlight in our restaurant. There are countless wonderful wines to be found in the wine cabinet!” says Terry. A striking artwork in the restaurant is a painting of an upside-down tree, originating from Ornellaia, a real eye-catcher. The interior of the restaurant is infused with cobalt blue color accents, Esther's favorite color. "Striking elements are the blue columns and epoxy tabletops, and colorful flower bouquets," says Terry. "Graffiti forms a common thread in my life and is incorporated both in the dishes we serve and the various elements we have applied in the restaurant." As for kitchen utensils, Terry's favorite is the blowtorch. "I love working with the blowtorch, especially for cooking ingredients," he says. "For example, if you briefly torch a piece of marinated fish, it gets such a delicious roasted flavor." Culinarily, Terry shares his love for Spanish tapas. "The Spanish tapas culture is the most beautiful for me, especially from a gastronomic point of view," says Terry. "My most memorable experience was at Quique Dacosta, where we had a 34-course menu in 7 stages. With so many different flavors and textures, it was a fantastic experience!" Terry's culinary upbringing looked quite different. "I grew up with spaghetti and pea soup from my mother, but my parents have closely followed my development in the culinary world," says Terry. "They now also come to eat at STER and have become more self-taught in their culinary experiences." About the collaboration with SOUS, Terry says: "During the corona crisis we started with to go, which brought a lot of name recognition. As entrepreneurs, we enjoy making our dishes accessible to a wider audience. Hopefully, people who have tasted our menu at home will also come to dine with us at the restaurant!" Chef-kok Sander de Jong: “Ik heb eigenlijk nooit een ander beroep in mijn hoofd gehad, ik vind het geweldig!” In de culinaire zoektocht naar wat chefs bezighoudt, gaan we met ‘SOUS Stories’ bij hen aan tafel en bespreken we hun pad naar succes. Deze keer schuiven we aan bij Restaurant Aan de Poel**. Met Sander de Jong praten we over zijn culinaire opvoeding, zijn belangrijkste leermeesters, maar ook: wat er volgens hem onmisbaar is in de keuken. Het is woensdagochtend 11 uur. De mise en place wordt voorbereid en her en der worden nog wat puntjes op de i gezet voor de lunch begint. Het prachtige, met twee Michelinsterren bekroonde restaurant tovert smaakvolle kunstwerkjes uit de open keuken. De locatie – gelegen aan 'de grote Poel’ – is buitengewoon prachtig. We zitten aan tafel met Sander en beginnen het gesprek met de vraag: “Wat is jouw favoriete land als het op eten aankomt?” Zonder enige twijfel antwoordt hij: “Italië! De Italiaanse keuken, met name vanwege de eenvoud ervan. Neem bijvoorbeeld een heerlijk sappige tomaat, een ambachtelijke mozzarella, wat blaadjes basilicum en wat balsamico om het af te maken, et voilà: je hebt een heel mooi gerecht. Met een aantal eenvoudige ingrediënten zet je de heerlijkste gerechten op tafel - om je bord bij af te likken, zo lekker! Ik heb tijdens mijn reizen naar Italië onvergetelijk mooie (culinaire) herinneringen mogen verzamelen.” Sander wist van kleins af aan dat hij later chef wilde worden. Op de vraag hoe zijn culinaire opvoeding eruitzag, antwoordt hij: “Mijn ouders hadden vroeger een slagerij. Als ze daar niet mee waren gestopt, was ik waarschijnlijk slager geworden.” Daaropvolgend vertelt Sander: “Maar stiekem wist ik al heel vroeg dat ik later in de keuken zou gaan werken. Ik kreeg voor mijn vierde verjaardag een speelkeukentje. Sindsdien heb ik in mijn hoofd gehad dat ik kok wilde worden. Ik heb eigenlijk nooit een ander beroep in mijn hoofd gehad, ik vind het geweldig!”, zegt Sander. Sander heeft twee hele belangrijke leermeesters gehad in zijn carrière. Om te beginnen vertelt hij: “Ik heb in Duitsland gewerkt bij Thomas Bühner van Restaurant La Vie. Van hem heb ik ontzettend veel mogen leren. ” Sander vervolgt: “En van Stefan van Sprang heb ik niet alleen de basis van koken mogen leren, maar ook alles met betrekking tot gastvrijheid. Daarnaast vind ik het een hele eer dat ik hier al negen jaar mag werken met Stefan — dag in, dag uit.” Bij Restaurant Aan de Poel staan seizoensgebonden gerechten centraal: “Ons Chef’s menu wisselt elke vier weken. We bieden dan vier of vijf nieuwe gerechten waarmee we écht meegaan met de seizoenen, maar ook met het aanbod van onze leveranciers.” Onderscheidend is dat Aan de Poel de seizoenen eerder ziet als weken dan als maanden: “De ingrediënten zijn vaak echt maar een paar weken in de gewenste kwaliteit verkrijgbaar. Gerechten serveren van topkwaliteit is bij ons het belangrijkst. Mijn favoriete seizoen om mee te werken is toch wel de winter. Het is tijdens de winter echt een uitdaging met welke ingrediënten je kunt werken; ik houd wel van een uitdaging. Het leukst vind ik knolgroenten, maar ook knolselderij, topinamboer, en winterpaddenstoelen zoals morielje en eekhoorntjesbrood. Dat zijn echt wel de ingrediënten die het voor mij de winter maken!” De lente komt iedere dag een stukje dichterbij, iets waar Sander ook erg naar uitkijkt. “Dan gaan we weer meer werken met jonge groenten, zilte zeegroenten, de frisse smaken en kleuren. Als het zonnetje gaat schijnen, dan begint dat weer te kriebelen!” En denk je aan de lente, dan denk je ook aan heerlijke gerechten bereiden op de barbecue. “De geur en de smaak van de verbrande houtskool, dat vind ik écht lekker! Niet zozeer alles langzaam garen op de barbecue, maar het roosteren, dát vind ik mooi. Deze techniek passen we richting het voorjaar dan ook weer veelvuldig toe,” aldus Sander. Over de samenwerking met SOUS vertelt Sander tot slot: “Wat het concept voor ons zo interessant maakt, is dat het voor mensen die niet zo ervaren zijn met sterrenrestaurants laagdrempelig wordt om die ervaring in huis te halen. Zo kunnen wij hen een mooie, eerste kennismaking bieden met onze gerechten en smaken. Ron Blaauw: “A place where you can relax and a place where you can be yourself” In the culinary search for what drives chefs, we join them at the table with ‘SOUS Stories’ and discuss their path to success. This week, we feature a true ambassador of the hospitality industry: Ron Blaauw.Ron Blaauw is one of the Netherlands' most famous top chefs. With his restaurants, he managed to earn multiple Michelin stars. What does a restaurant mean to him? Everything! Being together, a place where you can relax and a place where you can be yourself," says Ron. “But also a place where I feel safe, but above all a place where people are enjoying themselves with a big smile. With the sound of cutlery and the murmur of conversation, because that really is the ultimate sound.” When asked how Ron managed to reach the culinary top, he answers: “I think I got to where I am now by daring to make many mistakes, learning from them, but also by falling down and getting back up again. Sometimes you inevitably take a step back, but then it’s important to take two steps forward again. But above all: never give up and always keep enjoying it.” And when you think of Ron Blaauw, you also think of his delicious Indonesian dishes. According to Ron, Indonesian cuisine is synonymous with a piece of history and the ultimate taste experience. “A rijsttafel is very versatile with all those different bowls on the table, you can see it as modern tapas. And the great thing is: if you order it, there’s hardly any preparation time.” But, Ron certainly invites enthusiastic home cooks to stir the pans themselves: “You can take courses with us to make your own rendang, sambal, and other things.”And of course, Ron himself also has a favorite dish: “Definitely the nasi, from the recipe of our chef Agus. He knows exactly how spicy it should be, but also the use of trassi in the nasi is essential. The taste experience that Agus manages to create is unique. Ron continues: “When I go on holiday to Thailand, I can’t wait to immerse myself in the local cuisine. But after two days of Thai food, I’ve had enough. For example, I don’t have that with Indonesian cuisine: I can’t get enough of it. Delicious!” And which cookbooks should really not be missing from the shelf? Ron answers with a laugh: “10 years of Gastrobar, of course! And in addition, I can definitely recommend the book by Paul Bocuse or by Escoffier for anyone interested in classic cuisine. Here you’ll find all the classic French preparations, from making a salpicon ragout to a Beef Wellington. I think basic techniques are essential if you love cooking.” According to Ron, people often skip these and prefer to choose a modern or popular book by Ottolenghi or Jamie Oliver. When Ron cooks at home, he enjoys his fried potatoes the most. When asked what makes these potatoes so special, he answers: “That’s a secret! I can’t reveal anything about that. In fact, there’s really a veto on that!”The most special experience Ron has had outside the home was at Paul Bocuse. “I’ve had many wonderful culinary experiences, but this one stands out head and shoulders above the rest for me. I was there with my kids, and my son, who at the time didn’t like much, was served an amazing sole. He was enjoying it so much.” The service was also really top-notch, says Ron, “The kids were completely spoiled, and that dessert trolley was just incredible to see!” Finally, we ask Ron what the collaboration with SOUS means to him. “The collaboration initially arose from an emergency situation during the corona period. But, even after this period, many people still wanted to dine at home. And understandably so, because how fun is it to bring a restaurant experience into your home?! Luc Kusters from Restaurant Bolenius*: "I am most proud of the people who stand here at Bolenius every day" In the culinary search for what drives chefs, we interview SOUS Stories different chefs about how they reached the highest culinary level, what their most memorable dining experience was—but also: what is the craziest experience they've ever had with a guest in their restaurant. We sit down with chefs in their own environment and discuss their path to success. We kick things off with Luc Kusters from restaurant Bolenius!In 2016, Bolenius received its first Michelin star, followed by the Michelin Green Star, awarded for the first time in March 2023. A truly remarkable achievement for chefs dedicated to a sustainable future, and that is exactly what Bolenius has been focused on for more than ten years. Luc’s most memorable dining experience is an easy one: “Already 25 years ago, restaurant Bras in France, even then a very progressive restaurant with many plant-based influences. That was still very unique at the time. We were served a completely plant-based dish beforehand, which was truly revolutionary! And to think that Bras, 25 years later, is still number one! I think that perhaps this will never change.”When we ask Luc about the cookbook that, in his opinion, everyone should have on their shelf, he doesn’t really have to think: “Harold McGee, On Food and Cooking. Basically the only book that really deals with the facts of cooking. If this book were to be rewritten, it should actually be exactly the same. It’s about the science in the kitchen and the facts about it, a must-read for every chef. Many other books are often about the opinion and experience of the chef or writer themselves. By the way, I also think the book by Michel Bras is wonderful.” The craziest experience he’s ever had in his restaurant is a tough question for Luc. “I’ve been spared really extreme things. Sometimes, though, there are guests who, for example, eat the tail of the langoustines. Or someone who says they don’t eat vegetables. They’re very different things, but I hear crazier stories than this sometimes.” Even in the Zuidas, it’s more stable and conservative than you might initially think! It feels good that many reliable guests come to Bolenius and that so far it has remained at these kinds of small, actually funny moments, says Luc. Luc knew from a young age that he was going to become a chef. “I found it strange when others didn’t know what they wanted to do later, because I already felt this very strongly at a young age.” In his career, Luc has worked at many different companies, and that experience gave him handy tools that he was later able to apply in his own business. His determination and perseverance are his drive: “You need to have a lot of patience and be stubborn, especially with Dutch cuisine and especially now that Dutch cuisine is such a hot topic.” Luc Kusters is one of the six founders and ambassadors of Dutch Cuisine. “I’m now even invited to give lectures about Dutch cuisine, and to think that the Dutch kitchen was really not done 15 years ago.”By now, things are really different and more and more people are realizing that we need to handle our food and the entire food chain differently. “You see that the world is changing and people’s interest in sustainability and plant-based food is increasing. At Bolenius, it’s mainly about being able to serve delicious dishes to our guests. It shouldn’t become a course, mainly tasty food, and at the same time to show people that this offers a solution for the entire food chain. And with that, we want to convey that plant based is the way to go,” says Luc.  For Luc, the word restaurant mainly means having his own place with his own people. “I’m most proud of the people who are here at Bolenius every day. Some have been at Bolenius for 8 years already. The fact that people stay with me for so long creates trust, and also makes it a kind of place of rest for me.” His masterful dish that he likes to cook at home? Pasta with clams. “If you were to ask my daughter what her favorite dish is, it’s pasta with clams. No haute cuisine at home, but a simple, tasty pasta dish with clams.”  Finally, we ask Luc what it means to him to be a partner of SOUS, something we are of course always curious about! “During Corona, I learned that there is a large group of people who find it difficult to go out to eat. They actually enjoy experiencing a well-catered dinner at home.
