The rare grain variety Campremy. Just as a chef is always looking for the market vendor who can offer him the best ingredients, Dimitri went in search of a grain supplier who could deliver him the 'grand cru' among wheat varieties. He ended up with a French cooperative that grows the rare 'campremy' wheat; a rare variety that turns out to be perfect for flavorful sourdough bread.

A specially selected white wine from the Côte Roannaise made from Rousanne and Viognier grapes. You can melt the fondue in it, but it is also a delicious pairing with cheese dishes. About Het Kaasatelier
The Kaasatelier is a young company run by Joost, who has spent most of his life working in top-class restaurants and related businesses. Together with Lotte, who is also his partner, he sources the finest cheeses from all over Europe, produced on a small scale using traditional methods and with love for the animals and the environment. The Kaasatelier ages these cheeses until they are ready to be sent to restaurants throughout the Netherlands and Flanders.
