Orange cauliflower is een plantaardige variant van het bekende Amerikaans-Chinese gerecht: orange chicken. In plaats van gefrituurde kip, wordt knapperige bloemkool gebruikt, bedekt met een zoetzure sinaasappelsaus. Dit gerecht biedt dezelfde heerlijke combinatie van krokante textuur en de kenmerkende zoete citrussmaak.
Elote, oftewel Mexicaanse gegrilde maïs, is een geliefde streetfood in heel Mexico. De maïskolf wordt gegrild boven een open vuur, waardoor de suikers in de maïs karamelliseren en het een heerlijke rokerige smaak krijgt. Vervolgens wordt de maïs ingesmeerd met een mengsel van mayonaise en crème fraîche, bestrooid met Tajín, een pittige chilipoeder met limoen, en geraspte pecorino.
Pindasoep, gemaakt van gemalen pinda’s, bouillon en sambal, is bijzonder populair in Suriname. Het gerecht wordt vaak geserveerd tijdens feestdagen en speciale gelegenheden vanwege zijn voedzaamheid en de unieke smaak die de lokale specerijen bieden. Wij hebben ervoor gekozen om de soep te serveren met gebrande klapper (kokos).
De Japanse vegetarische hotdog is een modern voorbeeld van fusion cuisine. Deze versie vervangt de klassieke hotdog door een plantaardig alternatief, dat wordt gegarneerd met wasabimayonaise en yakitori-gel. Daarnaast wordt het gerecht afgemaakt met furikake, een smaakvolle Japanse specerijenmix en wordt de hotdog geserveerd in een briochebroodje.
Voor de vegetarische variant van ceviche verde hebben we gekozen voor gele biet in plaats van vis. De biet wordt subtiel gemarineerd en gecombineerd met een aromatische olie van limoenblad. De heldere, citrusachtige smaak van het limoenblad geeft de biet een frisse, opwekkende toets, terwijl de natuurlijke zoetheid van de gele biet zorgt voor een mooie balans.
Som tum, een beroemd gerecht uit de Thaise keuken, is een pittige papayasalade die zijn oorsprong vindt in het noordoosten van Thailand. De salade bestaat uit jonge, onrijpe groene papaya gemengd met krachtige smaken zoals chilipepers, gefermenteerde paddenstoelensaus, limoensap en pinda’s.
Tacos zijn een iconisch gerecht uit de Mexicaanse keuken dat wereldwijd bekend is. Voor deze vegetarische box hebben we gekozen voor zachte maïstortilla’s, gevuld met koningsboleet, een paddenstoel met een diepe, umami-smaak, en frisse rode kool. Deze combinatie biedt een smakelijke vulling, waarbij de aardsheid van de paddenstoel mooi samengaat met de knapperige textuur en lichte zuurheid van de rode kool.
Cannoli zijn Siciliaanse zoetigheden die hun oorsprong vinden in het oude Sicilië. Het gerecht bestaat uit knapperige, gefrituurde deegrolletjes die gevuld worden met een romige vulling van zoete ricotta, vaak gemengd met vanille, chocolade of gekonfijte vruchtjes en in dit geval pistache crème. Tip: dresseer de cannoli’s met poedersuiker.
