Over Restaurant Bolenius
"Het vlaggenschip van de Dutch Cuisine". Kamperlam, zeetong uit de Noordzee, kaviaar uit Eindhoven en groenten, veel groenten. Tuinbonen, knolselderij, liefst uit eigen tuin, pal naast het restaurant op de Amsterdamse Zuidas. Dat is Bolenius. In 2010 opende Bolenius de deuren, met al snel daarna een Michelinster. De focus op duurzaamheid, met duurzame vis- en vleesproducten van de hoogste kwaliteit zorgde voor in 2023 nog een Groene Michelinster. Chef Luc Kusters wilde van jongs af aan al dat hij een chef wilde worden en voordat hij Bolenius begon had hij al in vele restaurants ervaring opgedaan. Zijn vastberadenheid en volhardendheid is zijn drive “Je moet veel geduld hebben en eigenwijs zijn.” Luc Kusters is een van de zes grondleggers en ambassadeur van Dutch Cuisine. Voor hem draait het bij Bolenius niet alleen om heerlijk eten, maar ook om bewustwording over de voedselketen. Hij is het meest trots op zijn team, dat voor hem een bron van vertrouwen en stabiliteit vormt.
