“My menu reflects the traditions with which every meal begins: bread and oil. That is why I chose to serve this crusty bread, made with 50 percent whole wheat flour, with the local extra virgin olive oil from Terracina. But I also wanted to add something that was very specifically evokes memories of my childhood. That's why warm focaccia that goes wonderfully with lemon butter and anchovies from Cetara. This is, as it were, a a nod to the Amalfi Coast, and it was also my favorite snack. Grandfather Domenico.
“This starter reminds me of my childhood in Agro Pontino, an area south of Rome. in the middle of a national park. Here, water buffalo are among the most commonly kept animals, not not only for their milk, which is used to make cheese (especially mozzarella), but also for the meat that is consumed in various ways. That is why this bresaola accompanied by pumpkin in various forms and Pecorino Romano DOP sauce.
Ravioli with scampi is a very common dish in seafood restaurants, especially in central Italy. This is my own interpretation by making pasta with squid ink and by adding a create a unique sauce that combines the flavors of tomato and scampi.
As with any dinner, full attention should be given to the dessert. Just as with the At the start of this "culinary journey," I conclude with a nod to the Amalfi Coast, where this lemon delicacy steals the show. It is very much a part of this region. Of course, it is my own creative interpretation, supported by my own limoncello, made with Italian ingredients, for some extra sparkle to this traditional dessert.

About Aroma Restaurant
My name is Pasquale Carfora and I am from Italy. I grew up on the coast of Sabaudia in the Lazio region, south of Rome. I lived partly with my parents and partly on my grandparents' farm. From a very early age, I was exposed to typical southern Italian cuisine. On the farm, old, traditional dishes were prepared with ingredients straight from the land. Pure and fresh. My mother also worked as a chef in an Italian seaside resort, which brought me into contact with professional cuisine. This early phase shaped the rest of my life, because even then I decided to devote my life to cooking. For me, the harmony in my dishes symbolizes the harmony I have found in my life between Italy and the Netherlands, between different cultures and cooking styles. At the Aroma restaurant, I hope to honor all the important people in my life who have brought me to where I am today. To all my teachers, especially Jacob Jan Boerma, who taught me so much. To my parents-in-law Jan and Paola and my Elisa, with whom I am embarking on this enormous adventure. And, of course, to my parents and grandparents, who instilled in me a love of cooking so many years ago.
