Bolenius Restaurant

The flagship of Dutch Cuisine. Kamper lamb, North Sea sole, caviar from Eindhoven, and vegetables, lots of vegetables. Broad beans, celeriac, preferably from our own garden, right next to the restaurant in Amsterdam's Zuidas business district. That's Bolenius. Bolenius opened its doors in 2010 and quickly earned a Michelin star. Its focus on sustainability, with sustainable fish and meat products of the highest quality, earned it another Green Michelin star in 2023. Chef Luc Kusters knew from an early age that he wanted to be a chef, and before starting Bolenius, he had already gained experience in many restaurants. His determination and perseverance are his driving force. "You have to be very patient and stubborn." Luc Kusters is one of the six founders and ambassadors of Dutch Cuisine. For him, Bolenius is not only about delicious food, but also about raising awareness about the food chain. He is most proud of his team, which is a source of trust and stability for him.
