Nederlands vlees van melkkoeien die hebben gegraasd en langzaam zijn gegroeid. Het feit dat ze melk hebben geproduceerd en gekalverd hebben, geeft Robert een goed gevoel. Een beetje bijvoeding is geen probleem, het geeft het vlees een iets vetter karakter. Daarnaast hecht ik waarde aan de textuur van het vlees en vind ik het niet prettig als malsheid als enige kwaliteitsindicator wordt gebruikt.’ - Robert Kranenborg
Deze burger is een 50% rundvlees, 50% champignonburger die de smaak van 100% vlees behoudt. Met deze burger dragen vleesliefhebbers bij aan een duurzame wereld zonder concessies te doen aan de smaak. De champignons zorgen voor een sappige en minder vette burger met een mooie umami smaak. Veel mensen verkiezen deze burger boven een 100% vleesburger.
De tempeh Kranenburger is een duurzame, puur plantaardige burger met een nootachtige en malse smaak. De burger wordt bereid met lokale biologische boekweit- en quinoa zaden die in contact gebracht worden met een schimmelcultuur, genaamd Rhizopus oligosporus. De fermentatie die op deze manier tot stand komt geeft als resultaat een burger met een heerlijke umami smaak, textuur en bite.
Breng uw burgers monumentaal op niveau met onze sauzen. Met een minimum aan voorbereiding worden deze snel en puur op tafel gezet. Twee koude sauzen, chipotle ketchup en sweet mosterd, en een groene pepersaus om warm te serveren.
Le Ballon is een plantaardige biologische brioche bol. Het deeg is verrijkt met plantaardige margarine en rietsuiker. Door dit deeg op een speciale manier te draaien evenaren we de luchtige structuur en de zoetige smaak van brioche.
Over Robert Kranenborg
Robert J.K. Kranenborg (1950) heeft een indrukwekkende staat van dienst in de culinaire wereld. Hij genoot een bevoorrechte opleiding tot ambachtelijk kok, met een focus op zowel de Franse als internationale Nederlandse keuken. Deze opleiding duurde maar liefst 12 jaar. Het onderstreept zijn toewijding en passie voor zijn vak. Na het voltooien van zijn opleiding kreeg Kranenborg in 1977 de leiding over zes restaurants in zowel België als Nederland. Zijn missie was altijd gericht op het behalen van het Michelin-sterrenniveau. En met groot succes. Hij heeft zes Michelin-sterren weten te behalen. Vanaf 2008 koos Kranenborg een nieuwe weg. Hij zette zijn kennis en ervaring in als restaurantconsultant op de meest uiteenlopende gebieden. Opnieuw oogstte hij succes. Ditmaal met vijf restaurants in Nederland en Duitsland die in totaal zes Michelin-sterren verdienden. Kranenborgs culinaire carrière is een inspiratiebron voor velen en zijn prestaties hebben een blijvende stempel gedrukt op de gastronomische wereld.
