Het menu
Ha Kau (uitgesproken als Ha Kaauw) is een stukje deeg gevuld met garnaal. De naam zegt het eigenlijk al: ‘ha’ betekent in het Chinees namelijk garnaal en ‘kau’ staat voor dumpling. Deze garnalendumpling wordt klaargemaakt als gestoomd hapje en heeft een heel dun,
Siu mai is een gestoomde Chinese dumpling waarbij een vulling van varkensvlees is verpakt in een wonton die niet volledig is gevouwen, zodat je de vulling van bovenaf kunt zien.
Gyoza zijn sappige en smaakvolle Japanse dumplings, meestal gevuld met gehakt vlees, kool, Chinese bieslook (Nira genoemd in het Japans), gember en knoflook. De dunne deegvelletjes zorgen voor een knapperige buitenkant bij het bakken in de pan en een sappige binnenkant. Met zijn oorsprong in China heeft gyoza zich in de loop der jaren ontwikkeld tot een populair gerecht in Japan.
Xiao Long Bao (of kleine dumplings in een mandje) zijn dumplings gevuld met een vaste vleesaspic samen met een varkensvulling. De aspic smelt bij verhitting en voilà, je hebt een heerlijke hartige soep binnenin de dumpling.
Visballetjes zijn een vast onderdeel in veel Aziatische huishoudens. In Hong Kong zijn ze een populaire Street food. Ze kunnen op zichzelf gegeten worden, gefrituurd, gekookt, met noedels, in curry, in hete potten, op spiesjes, gegrild of op elke manier die je maar kunt bedenken om ze te bereiden! Alle bereidingswijzen zijn heerlijk! Onze visballetjes is geserveerd in een bisque van schaaldieren.
Oorspronkelijk afkomstig uit Thailand, wordt dit soms Tom Yam genoemd en is het een soep die meestal garnalen bevat in een pittige en zure bereiding. De woorden Tom Yam betekenen "koken" of "heet" en "pittig en zuur", wat deze soep perfect beschrijft.
Edamame is een sojaboon die jong en groen wordt geplukt. Hierdoor is edamame zacht en eetbaar, niet hard en droog zoals de volwassen sojabonen die worden gebruikt om sojamelk en tofu te maken. Het woord edamame is Japans voor "bonen aan een tak".
Wakame komt oorspronkelijk uit de koudere kustgebieden van China, Korea en Japan. Wakame heeft een olijfgroene kleur. Het is een van de gezondste voedingsbronnen ter wereld. Het bevat een overvloed aan vitamines en mineralen en is laag in koolhydraten en vetten. En het smaakt ook nog eens heerlijk!
