Carlos Pola heeft een sterke focus op duurzaam verbouwen, nieuwe technieken en experimentatie. Duidelijke voorbeelden hiervan zijn de keus om enkel koffie 'natuurlijk/ongewassen' te verwerken omdat hiermee veel water verbruik voorkomen wordt. En belangrijker nog, vervuiling van waterbronnen.
Hij staat ook sterk achter het gebruik van de Mycorrhizal fungi, een type fungi dat een symbiotische relatie met de koffieplant aangaat en een uitwisseling van suikers en voedingstoffen verzorgt.
Voor deze koffie worden de kersen eerst in tonnen gefermenteerd in een luchtarme, anaerobe omgeving. Nadat het vruchtvlees verwijderd is blijft het slijmvliesje op de boon zitten. Deze plakkerige boontjes worden gedroogd op verhoogde droogbedden voor zo'n 30 dagen. Voor dit proces word nauwelijks water gebruikt.
De koffie is middel licht gebrand om de melasse en gebrande suiker tonen niet tekort te doen maar waarbij de rozijn en rood vrucht aroma's goed bewaard blijven.
Een easy going filter koffie voor in de ochtend of na een lange dag.
