Over 621 Ferments
621 Ferments werd in 2022 opgericht in de keukens van het restaurant Choux in Amsterdam. Wij, Maarten Bezem en Merijn van Berlo, werken echter al sinds 2013 aan een missie om onze eigen reststromen duurzaam te hergebruiken. Door middel van fermentatie en andere innovatieve processen blazen wij restproducten nieuw leven in, om ze opnieuw te kunnen integreren in onze menu’s. Op dezelfde manier zijn onze Garums tot stand gekomen. Wat ooit begon als een creatieve en smaakvolle oplossing binnen onze eigen keuken, groeide al snel uit tot een product met toenemende externe vraag. Zo kwam 621 Ferments tot leven. Vandaag de dag produceren we prachtige smaakmakers, geschikt voor zowel de professionele chefs als de gepassioneerde thuiskoks, en dragen we tegelijkertijd bij aan de vermindering van voedselverspilling. Wij staan dan ook voor pure kwaliteit en smaak, zonder concessies, sluiproutes of kunstmatige toevoegingen. We zijn namelijk trots om te kunnen melden dat onze producten volledig vrij zijn van chemische toevoegingen, en dat onze Beef, Mushroom en Black Garlic Garum geen allergenen bevatten. Dit maakt ze breed inzetbaar, zodat chefs uitstekend rekening kunnen houden met dieetwensen en allergieën. Onze garums verdienen daarom een plek in elke keuken, van sterrenrestaurants tot bij thuiskoks. Deze natuurlijke smaakversterkers voegen eenvoudigweg een ongekende diepgang toe aan elk gerecht, of het nu gaat om sauzen, soepen, jus, marinades of andere culinaire creaties. 621 Ferments maakt het nu voor iedereen mogelijk om gerechten naar een hoger niveau te tillen.

Bewaaradvies:
Alle 621 Garums zijn ongeopend op kamertemperatuur ten minste een jaar houdbaar. Na opening gekoeld bewaren en binnen drie maanden gebruiken.

Of course you have to go into the kitchen yourself to do the minimum of preparation, but it is also nice that you can make these beautiful creations on the plate yourself. Recommended!”
