Onze klassieker. Ik vind dit het échte brood. Gemaakt van op stenen gemalen biologisch tarwemeel, water, zeezout en onze eigen desemcultuur (zonder toegevoegde gist). De karakteristieke, stevige korst is knapperig en beschermt het brood tegen uitdrogen. Dit is brood waar je een stuk van af wilt scheuren om te eten bij soep of een mooie salade. Maar je kunt er natuurlijk ook mooie plakken van snijden en die beleggen.
Deze grove desembol is lichtbruin van kleur. Dat komt omdat we niet werken met kleurstoffen zoals gebrande mout om het brood onnatuurlijk donker te kleuren. Dit brood bestaat uit op stenen gemalen, biologisch volkoren- en gebuild tarwemeel mét kiem, water, zeezout en onze eigen desemcultuur (zonder toegevoegde gist). Speciaal voor degenen die van wat grover desembrood houden, met een knapperige korst.
Ons desem meerzadenbrood heeft dezelfde basis als het desem tarwe wit: op stenen gemalen biologisch tarwemeel, water, zeezout en onze eigen desemcultuur (zonder toegevoegde gist). Alleen wordt dit brood verrijkt met een bijzondere selectie zaden: zonnebloempitten, lijnzaad, sesam en maanzaad, allen afkomstig uit de biologische landbouw. De smaak van de zaden ondersteunt de volle smaak van het desembrood. Lekker én gezond!
Mijn eigen mix van op stenen gemalen, biologisch volkoren roggemeel en gebuild tarwemeel, water, zeezout en onze eigen desemcultuur (zonder toegevoegde gist). Rijk gevuld met biologische walnoten, hazelnoten en rozijnen. Dit is echt snoepjesbrood. Superlekker met een mooi stukje kaas, maar eigenlijk het allerlekkerst om dunne plakken van te snijden en te eten met een beetje verse boerenroomboter.
Prachtig biologisch desem notenbrood, op basis van het desembrood tarwe wit met heel veel biologische walnoten. Door het lichte vliesje van de walnoten kleurt het deeg heel mooi grijs/paars. Heerlijk in combinatie met kaas. Als het brood een paar dagen oud is, kun je er dunne plakken van snijden die je vervolgens roostert. Misschien wel nóg lekkerder...
Desem spelt is bij ons gemaakt van 100% biologische speltbloem. We gebruiken een aparte desemcultuur die natuurlijk ook van spelt is gemaakt. Hierdoor is ons speltbrood tarwevrij, en daar zijn we trots op! Spelt is een oude graansoort met een heel eigen karakter. Er worden allerlei gezondheidsvoordelen toegedicht aan spelt ten opzichte van tarwe (google maar eens). Wij vinden het vooral heel erg lekker.
Fransen zeggen: 'Dit is het brood zoals het vroeger bij de bakker in ons dorp gebakken werd'. Zelfs in Frankrijk kom je brood van deze kwaliteit nog maar zelden tegen. Een scherpe, knapperige korst en een onregelmatige structuur die crèmewit is. Vol van smaak. Als je je ogen dicht doet en je proeft goed, denk je aan goudgele franse tarwevelden op een bloedhete zomerdag. Gemaakt van alleen maar crèmekleurige tarwebloem van de mooiste franse tarwe, water, zeezout en een heel klein beetje gist.

Over Brood van Menno
Brood vanmenno is brood zoals het moet zijn. Een volmaakte balans van meel, zuurdesem (óf een heel klein beetje gist), water en zout. Niets meer, niets minder. Menno heeft geen geheimen. Daarom vertellen we het verhaal van zijn brood, gewoon zoals het is. Perfect brood? Bestaat niet. Ons meel is levend materiaal, waar we niet mee rommelen en niets aan toevoegen. Daardoor is iedere dag een beetje anders. Dat houdt ons werk leuk, en levert het meest bijzondere brood op dat je kunt bedenken. Perfectie, in onze ogen.
