Eend, pruim, agave, pistache crumble
Allergenen: noten
- Plaats de borden in de oven
- Zet een pan op hoog vuur, laat deze op temperatuur komen
- Verwarm de pruimen met de saus in een pannetje op matig hoog vuur (klein beetje everwarmen, niet aan de kook).
- Leg de lever nu in de hete pan. Je hoort de eendenlever sisselene, beweeg de lever in de pan zodat je een gelijke bruining krijgt.
- Draai de lever om in de pan en zet tegelijkertijd het vuur uit.
- Besprenkel de lever met peper en zout, terwijl deze nog in de pan liggen.
- Zodra je voelt dat de lever een beetje ingedeukt kan worden dan is deze op temperatuur.
- Voeg nu een klein beetje zout toe op de lever en leg deze op een vel keukenpapier uit de pan,
- Pak de borden uit de oven.
- Leg de pruimen op het bord en laat ruimte in het midden over voor de eendenlever en schenk de saus rondom het bord.
- Plaats de lever in het midden van het bord en dresseer het gerecht met de pistache.
