“Mijn menu weerspiegelt de tradities waarmee elke maaltijd begint: brood en olie. Daarom koos ik ervoor dit knapperige brood, gemaakt met 50 procent volkorenmeel, te serveren met de lokale extra vergine olijfolie uit Terracina. Maar ik wilde ook iets toevoegen dat heel specifiek de herinneringen aan mijn jeugd oproept. Daarom ook warme focaccia die geweldig combineert met citroenboter en ansjovis uit Cetara. Dit is als het ware een knipoog naar de kust van Amalfi en het was bovendien het favoriete tussendoortje van mijn grootvader Domenico.”
“In dit voorgerecht zie ik mijn jeugd in Agro Pontino, een gebied ten zuiden van Rome midden in een nationaal park. Hier horen waterbuffels tot de meest gehouden dieren, niet alleen voor hun melk waar kaas (met name mozzarella) van gemaakt wordt, maar ook voor het vlees dat op verschillende manieren geconsumeerd wordt. Daarom deze bresaola vergezeld van pompoen in verschillende vormen en saus van pecorino romano DOP.”
“Ravioli met scampi is een zeer gangbaar gerecht in visrestaurants, vooral in centraal Italië. Dit is mijn eigen interpretatie door pasta te maken met inkt van inktvis en door een heel eigen saus te creëren die de smaak van tomaat en scampi met elkaar verbindt.”
“Zoals bij elk diner hoort volle aandacht aan het dessert gegeven te worden. Net als bij de aanvang van deze ‘culinaire reis’ eindig ik met een knipoog naar de kust van Amalfi, waar deze citroendelicatesse de show steelt. Dit hoort helemaal bij die streek. Uiteraard is het mijn eigen creatieve interpretatie, ondersteund door mijn eigen limoncello, gemaakt met Italiaanse ingrediënten, voor wat extra glans aan dit traditionele dessert.”

Over Restaurant Aroma
Mijn naam is Pasquale Carfora en ik ben afkomstig uit Italië. Ik groeide op aan de kust van Sabaudia in de regio Lazio, ten zuiden van Rome. Hier leefde ik deels bij mijn ouders, deels op de boerderij van mijn grootouders. Al zeer vroeg kwam ik hier in contact met de typische Zuid-Italiaanse keuken. Op de boerderij werden oude, traditionele gerechten bereid met ingrediënten zo van het land. Puur en vers. Mijn moeder werkte daarnaast als chef-kok in een Italiaanse badplaats, waardoor ik ook aanraking kwam met de professionele keuken. Deze vroege fase heeft de rest van mijn leven gevormd, want al toen besloot ik mijn leven te gaan wijden aan koken. De harmonie in mijn gerechten staat voor mij symbool voor de harmonie die ik in mijn leven heb gevonden tussen Italië en Nederland, tussen de verschillende culturen en kookstijlen. In het restaurant Aroma hoop ik al die belangrijke mensen in mijn leven te eren, die mij tot hier hebben gebracht. Aan al mijn leermeesters en met name Jacob Jan Boerma, die mij zoveel heeft bijgebracht. Aan mijn schoonouders Jan en Paola en mijn Elisa, met wie ik dit enorme avontuur aanga. En natuurlijk aan mijn ouders en grootouders, die mij de liefde voor het koken zoveel jaren geleden hebben bijgebracht.
