Karakter: Intense neus met aroma's van citrusvruchten, grapefruit en perzik. In de mond is de wijn medium body met knisperende zuren en aroma's van citroen, sinaasappel, grapefruit, perzik en minerale toetsen. Lange afdronk met honing.
Wijnbereiding : Deze biologische wijn met Demeter certificering wordt verbouwd in het gebied Robola en is afkomstig van de lokale druivensoort Robola Kefallinia (BOB gecertificeerd). Deze 30 jaar oude wijngaard ligt op een hoogte van 650-700 meter, de bodem bestaat uit gefragmenteerde kalksteen en de speciale algemene bodem-klimatologische omstandigheden van de nabijgelegen berg Ainos. De naam van deze wijn komt van de Engelse commissaris Napier, die de wijn voor het eerst Vino di Sasso noemde, wat Wijn van de Steen betekent. Van deze nobele variëteit worden witte, aromatische wijnen met hoge zuren en subtiele minerale aroma's gemaakt. De aromatische kenmerken veranderen na verloop van tijd. Aanvankelijk geven ze het gevoel van vers fruit zoals citroen en andere citrusvruchten, maar ook bloemen. Tijdens het rijpen, na ±3e jaar, door het terroir uit kalksteen schijnt een petroliumaroma licht door. Naast zijn karakteristieke zuurgraad, ontwikkelt de wijn ook een lange afdronk met zijn rijpingspotentieel van zeven jaar. Deze wijn wordt geproduceerd in een beperkt aantal flessen.
Producentgegevens : De familie Sclavos was oorspronkelijk een redersfamilie die in 1700 naar Rusland emigreerde. In 1919, na de revolutie van 1917 in Rusland, keerden ze terug naar Kefalonia waar ze de eerste wijnstokken planten op het privédomein (50 hectare) in het gebied Kechrion. In 1990 werd de oude wijngaard heringericht en verbouwden ze de rassen Mavrodafni Kefallinias en Vostilidi met een biodynamisch-homodynamische methode. Hun doel is om natuurlijke biologische wijnen te maken met alle speciale kenmerken van de lokale variëteiten. Druiven worden zorgvuldig geselecteerd en ongeschikte druiven worden verwijderd. De vinificatie gebeurt met moderne middelen. De gisting gebeurt spontaan en alle wijnen worden ongefilterd gebotteld zonder extra processen, terwijl de toevoeging van sulfieten minimaal is en alleen wanneer nodig. Het doel is om in de komende vijf jaar alle druiven te telen via een biologisch-dynamische teelt.
