Deep red in color, with a concentrated aroma of violets and red cherry fruit. Rich, full-bodied on the palate. Dry with an intense flavor featuring lots of red fruit, cherries and morello cherries. The finish has a slightly sweet touch of raisins and a hint of bitterness.
Valpolicella Classico Ripasso ‘Marogne’
Classification: DOC Valpolicella Classico Superiore
Color: Full-bodied red wine
Country: Italy
Region: Veneto
Producer: Fratelli Zeni, Bardolino
Grape varieties: corvina 60%, molinara 20%, rondinella 20%
Winemaking: The grapes are harvested in 3 passes, 30% at the beginning of the harvest, 20% during, and 50% at the end. This is done to obtain as many different flavors in the wine as possible, from just-ripe fruit to overripe red fruit. The grapes from the 1st and 2nd picks are left to dry. After the 3rd pick, the entire harvest is fermented for 8 to 10 days, after which the wine is brought into contact with the lees/sediment of Amarone for one week in February, giving the wine a slight second fermentation. This gives the ‘Ripasso’ its full, rich flavor. (For clarity: Amarone is a very special Valpolicella made from grapes dried for months.) The ‘Ripasso’ then matures for 10 to 12 months in new large 1500-liter barrels made of French oak. Ripasso literally means to pass again, so after regular fermentation, the wine is brought into contact with the Amarone lees for a second time. The Ripasso contains 4 grams of residual sugar per liter.
Producer information: Since 1870, the Zeni family has been making wine on this beautiful estate in northern Italy. The tradition and knowledge of five generations and the use of classic, indigenous grape varieties form the basis for the true Italian character of the wines from this house. Fausto Zeni, assisted by his sisters Federica and Elena, produces about 1 million bottles of wine per year, one third of which comes from their own vineyards. Grapes for the rest of the production are purchased from local farmers with whom long-term contracts are made to guarantee and control grape quality. In 2010, an impressive barrel cellar was built under the property. Zeni’s vineyards are scattered along the southeastern shore of Lake Garda. They also operate a wine museum, renovated in 2017. Many wine-growing artifacts can be viewed here and wine can also be tasted. Signs in the tourist town of Bardolino point to the ‘Museo del Vino’.
Area information: The wine region Veneto (75,000 ha) borders the Adriatic Sea and stretches to Lake Garda and Trentino. It is one of the most important wine regions in Italy in terms of production volume. Verona and Venice are the main cities in the area. In recent years, there has been enormous investment in this wine region. The climate is somewhere between an Alpine/continental climate and a Mediterranean climate. The sometimes volcanic soil consists of red and brown earth on rubble, as well as marl and basalt. Viticulture in this part of Italy is very old and dates back to before the beginning of our era. 75% of the wines are white. The name Valpolicella dates from that time and literally means 'valley of the many (wine) cellars.' The Valpolicella area lies in the hills north and east of Verona. Here in Fumane, Zeni has his separate wine cellar where the grapes for all Valpolicellas are vinified and those for the Ripassos and Amarones are dried.
To serve with: With roasted and grilled (from the Green Egg or BBQ) red meat, game, poultry such as duck, stews, combinations with spices and sweet components, Asian flavors, spicy, hard and blue-veined cheeses.
Serving temperature: 16 to 18ºC
Other information: Marogne refers to the small walls in the vineyards, which serve to prevent soil erosion.

Had great experience with the sousbox. Especially recommended for a romantic successful home evening with the two of you. Candles on, music in the background and in turn, or cozy together, making the dishes and eating. Nice wine. Delicious no hurry, and top quality eat. What else do you want? What weakened love blooms again. An absolute must!

Sous is actually a culinary experience at home! Whether you want to dine extensively (while the children are in bed and you don't have to arrange a babysitter) or if you want to put a whole table full of tasty snacks in no time, because with Sous everyone can do it! It starts with the good service at the door, to the handwritten card that you receive during the holidays. And don't forget the tasty food of course;) This means that we have been a customer of Sous for years and we hope to be able to enjoy this for a long time.

Ordered a box for the second time and enjoyed it again! The delivery is super, very well packaged and what delicious dishes! It is already a party to draw up the signs according to the supplied guidelines. And then to have a star meal in your own house. We will do this much more often, a big 10!

So easy. Delicious food without worries. With Christmas, no shopping lists, not in line in the stores, no stress in the kitchen. Pure luxury. If you are (already a bit older) opposite to invite people, just order a delicious meal at Sous, then you can also enjoy the food and the fun. Several times, ordered different meals and every time it was perfect!

We had much to celebrate with our family. Above all, life; After a nasty disease that has left my body. And the happiness of a brand new bridal couple whose wedding we had missed because I am not allowed to fly after an operation. The World of Streetfood combines perfectly with the vegetarian variant. We sat at the table with each other a wonderful afternoon. The dishes were put together by changing chefs. It was a relaxed and delicious experience.

“A delightful experience, enjoyed an exquisite meal. Neatly packaged, clearly described what you need to do to REALLY enjoy it. What a wonderful formula!”
“We ordered sous for our anniversary dinner. Since we have two children under three, it is not always possible to arrange a good night out. This way we could enjoy fine cuisine at home while the two little troublemakers slept peacefully. Delivery was smooth, preparation was easy, and tasting was ecstatic!”
“Perfect, every box is unique. We ordered for the first time during the pandemic and many times since then. Also, quite a few times as a gift for my friends—a perfect surprise on their doorstep! The refrigerated delivery service is the best! Would recommend 100%”
“Besides the great concept, diverse choice, and outstanding performance, communicating with sous was next level. Customer experience first. Very, very happy, and before I forget, the food is delicious!”
“Both boxes (Ron's Rames and Thai Boat) complemented each other perfectly in terms of flavors and presentation! We'll definitely be doing this again!”
“Delicious menu! Tasty and easy to prepare. You have to provide a nice ambiance yourself (nice plates, candles, music). If you create this romantic setting it will be a true 'night out'. Of course you have to go into the kitchen yourself to do the minimum of preparation, but it is also nice that you can make these beautiful creations on the plate yourself. Recommended!”
“The menu selection and delivery went very smoothly! A great way to have a lovely dinner at home with your guests, without being in the kitchen all the time. So all the time for catching up and enjoying great amazing food. Definitely something to do more often and try out the various restaurants.”
“I received this Surprise Restaurant Dinner meal prepared by Ron, the day before my birthday, from my sister-in-law who lives in Spain. I say Surprise Restaurant Dinner, because that's the ultimate experience I got after I unpacked the box, heated it according to the simple instructions and then enjoyed it with my husband of 48 years. The guy who had delivered it had given me a warm smile and said: enjoy it. ”
“We are huge fans of sous; as date nights out of the house with a baby aren't always that easy, we often have date nights at home with a sous box. This last time we had the Dijk 9 Autumn Menu, and of all the sous boxes we've ordered over the past few years, this was absolutely the best!”
“The information on the site matches reality. Ordering is simple. Delivery is easy to track online and always on time. And the quality of the food is always a reason to be happy. For us, there's no need to get in the car and drive to a restaurant anymore. And nobody has to be the designated driver anymore.”
“It was delicious. Both the Indonesian rice table and the Chinese shared dining meat dishes were tasty. In December, we're going for the Dick Middelweerd menu. I think this is a great formula. I'm going to use it more often.”
