Winemaking: The hand-harvested ripe grapes are selected and then pressed in whole bunches. Fermentation in barriques and stainless steel barrels with indigenous yeasts. Shafer deliberately omits the second fermentation for this wine to keep it more “crispy” and less “heavy” than many American Chardonnays. 25% of the wine is aged in 225 l stainless steel barrels, the rest matures in new French barriques (Allier and Vosges). The wine undergoes 14 months of barrel aging.
Area information: The Carneros area is located on the northern shore of San Francisco Bay, just south of Napa Valley and the town of Sonoma. Carneros is the southern part of both Napa and Sonoma County. The area covers a total of 3,237 ha, with 615 ha on the Napa side and 2,622 ha of vineyard on the Sonoma side. It is a cool region, slightly hilly, bordering San Pablo Bay. A fresh wind provides morning fog daily. It is one of the coolest wine regions in California, which is why grape varieties such as pinot noir and chardonnay in particular produce fantastic qualities here.
