Classification: Qualitätswein, VDP Gutsriesling
Type of wine: Light white wine
Closure: Cork
Country: Germany
Region: Mosel
Producer: Weingut Van Volxem, Wiltingen
Grape variety(ies): Riesling
Wine making: After a manual harvest, the grapes from 30-year-old vines go partly into stainless steel tanks and partly into foeders for soaking and eventually fermentation with wild, grape-native yeasts. There is no malolactic fermentation for this wine. This entire process of vinification and aging takes about 6 to 7 months, using a minimum of sulfur, after which bottling takes place without fining.
Producer information: This estate is located in the historic center of Wiltingen, one of the most famous wine-growing communities on the Saar. As a former monastic wine estate of the Luxembourg Jesuits, it already had large plots of vineyards in the best wine hills of Wiltingen at the beginning of the 18th century, such as Scharzhofberger, Kupp, Klosterberg, and Gottesfuss. In 2003, the Kanzemer Altenberg was added, which, like the other vineyards, was classified as Grand Cru in 1868. The average age of the vines is 40 years, with standouts such as the 120-year-old ungrafted vines in the Gottesfuss, one of the steepest and most renowned Saar plots. Ungrafted rootstocks can grow on slate because the phylloxera cannot take root here. Roman Niewodniczanski, who took over and completely restored the estate in 2000, is a descendant of the Bittburger dynasty. His drive for quality is unbridled and his aim is to optimally express the different top terroirs (steep mineral-rich slate, sandstone, and rhyolite). Large investments have been made in the vineyards for this, and the grapes are always picked late and by hand in several phases at the end of October/November.
Area information: The Mosel wine region, which also includes the tributaries Saar and Ruwer, is one of the most beautiful wine regions in Germany. Wonderful wines are produced here, mainly based on the renowned Riesling grape. The reason this grape thrives so well in this area between Koblenz and Trier is due to a combination of climate and soil. The cool, northern climate ensures that the grape has to ripen for a long time and develops beautiful acids. The soil is beneficial in two ways. Firstly, there is the location of the vineyards, on the steep slopes of the banks of the Mosel and its tributaries. The most beautiful slopes face west, receiving the most hours of sunshine. The variation in the quality of the vineyards is enormous. The Mosel is the German river with the most bends, which means the slopes face all directions. In addition, there is the subsoil itself. The best soil contains a lot of slate. This has the property of retaining the sun's warmth from the day into the evening hours, thus giving the grapes some extra warmth. As a result, the ripening process proceeds gradually.
Serve with: Aperitif, with fish dishes (not smoked) such as ceviche, shellfish and crustaceans, sushi or other Asian dishes, including spicy flavors, creamy fresh cheeses.
Serving temperature: 8 to 10ºC
Wine has been made here since Roman times, and the current buildings of Van Volxem are partly built on foundations from that era. Van Volxem's aim with the dry wines is a digestible wine with an alcohol content of around 12%.
Allergens: sulfites

Had great experience with the sousbox. Especially recommended for a romantic successful home evening with the two of you. Candles on, music in the background and in turn, or cozy together, making the dishes and eating. Nice wine. Delicious no hurry, and top quality eat. What else do you want? What weakened love blooms again. An absolute must!

Sous is actually a culinary experience at home! Whether you want to dine extensively (while the children are in bed and you don't have to arrange a babysitter) or if you want to put a whole table full of tasty snacks in no time, because with Sous everyone can do it! It starts with the good service at the door, to the handwritten card that you receive during the holidays. And don't forget the tasty food of course;) This means that we have been a customer of Sous for years and we hope to be able to enjoy this for a long time.

Ordered a box for the second time and enjoyed it again! The delivery is super, very well packaged and what delicious dishes! It is already a party to draw up the signs according to the supplied guidelines. And then to have a star meal in your own house. We will do this much more often, a big 10!

So easy. Delicious food without worries. With Christmas, no shopping lists, not in line in the stores, no stress in the kitchen. Pure luxury. If you are (already a bit older) opposite to invite people, just order a delicious meal at Sous, then you can also enjoy the food and the fun. Several times, ordered different meals and every time it was perfect!

We had much to celebrate with our family. Above all, life; After a nasty disease that has left my body. And the happiness of a brand new bridal couple whose wedding we had missed because I am not allowed to fly after an operation. The World of Streetfood combines perfectly with the vegetarian variant. We sat at the table with each other a wonderful afternoon. The dishes were put together by changing chefs. It was a relaxed and delicious experience.

“A delightful experience, enjoyed an exquisite meal. Neatly packaged, clearly described what you need to do to REALLY enjoy it. What a wonderful formula!”
“We ordered sous for our anniversary dinner. Since we have two children under three, it is not always possible to arrange a good night out. This way we could enjoy fine cuisine at home while the two little troublemakers slept peacefully. Delivery was smooth, preparation was easy, and tasting was ecstatic!”
“Perfect, every box is unique. We ordered for the first time during the pandemic and many times since then. Also, quite a few times as a gift for my friends—a perfect surprise on their doorstep! The refrigerated delivery service is the best! Would recommend 100%”
“Besides the great concept, diverse choice, and outstanding performance, communicating with sous was next level. Customer experience first. Very, very happy, and before I forget, the food is delicious!”
“Both boxes (Ron's Rames and Thai Boat) complemented each other perfectly in terms of flavors and presentation! We'll definitely be doing this again!”
“Delicious menu! Tasty and easy to prepare. You have to provide a nice ambiance yourself (nice plates, candles, music). If you create this romantic setting it will be a true 'night out'. Of course you have to go into the kitchen yourself to do the minimum of preparation, but it is also nice that you can make these beautiful creations on the plate yourself. Recommended!”
“The menu selection and delivery went very smoothly! A great way to have a lovely dinner at home with your guests, without being in the kitchen all the time. So all the time for catching up and enjoying great amazing food. Definitely something to do more often and try out the various restaurants.”
“I received this Surprise Restaurant Dinner meal prepared by Ron, the day before my birthday, from my sister-in-law who lives in Spain. I say Surprise Restaurant Dinner, because that's the ultimate experience I got after I unpacked the box, heated it according to the simple instructions and then enjoyed it with my husband of 48 years. The guy who had delivered it had given me a warm smile and said: enjoy it. ”
“We are huge fans of sous; as date nights out of the house with a baby aren't always that easy, we often have date nights at home with a sous box. This last time we had the Dijk 9 Autumn Menu, and of all the sous boxes we've ordered over the past few years, this was absolutely the best!”
“The information on the site matches reality. Ordering is simple. Delivery is easy to track online and always on time. And the quality of the food is always a reason to be happy. For us, there's no need to get in the car and drive to a restaurant anymore. And nobody has to be the designated driver anymore.”
“It was delicious. Both the Indonesian rice table and the Chinese shared dining meat dishes were tasty. In December, we're going for the Dick Middelweerd menu. I think this is a great formula. I'm going to use it more often.”
