Het menu
Een koemelkkaasje van Mathilde, kaasmaakster in Kockengen. Van biologische melk van blaarkopkoeien maakt zij dit lactisch gestremde kaasje. Lactisch gestremd is op lage temperatuur en langzaam, waardoor de krijtstructuur ontstaat. Op de witkorst mag ook de Penicillium Geotricum ontstaan met de blauw grijze kleur. Zeker mee-eten! Fris, aards en nootachtig met een zweem van champignons.
Ecologisch rauwemelks geitenbrietje uit Zevenhuizen, Groningen. Hanneke Kuppens is met haar 48 Saanengeitjes verantwoordelijk voor dit heerlijke kaasje. Fluwelig van structuur met een hint van het geitje en paddenstoeltjes
Betekent de bloem. Heerlijke roodflora uit Lopikerkapel, gecreëerd door Rutger Pekelharing en zijn vrouw Marieke. Na hun pensioen werken zij nu harder dan ooit met zoveel passie! Het vak geleerd in Italië. De kaas heeft een gewassen korst, welke eetbaar is. De smaak is eerst aromatisch, structuur voluptueus. Tonen van gist en noten, zoet in de nasmaak.
Melk van MRIJ runderen, afkomstig uit Bodengraven. De onderzoekrapporten wezen uit dat de melk zo prachtig van samenstelling was, dat Evert Fokker met Cono eigen receptuur ontwikkelde en deze kaas werd geboren. Na een rijping van drie jaar zorgen de eiwit kristallen voor de crunch en de authentieke oude pakhuizen voor de diepe smaak. Butterscotch, koffie tonen en de geur van de houten planken waar ze op hebben liggen rijpen
Vernoemd naar de edelsteen Lapis Lazuli. We zijn weer terug bij Rutger en Marieke, maar nu met de receptuur van Gorgonzola. De penicillium wordt aan de melk toegevoegd en zodra de kazen hun vorm hebben, wielen van 12 kilo, worden ze doorspeist met breinaalden. In de kanaaltjes ontwikkelt zich de blauwader nu door de aanwezigheid van zuurstof. Nu de rijping van drie maanden en de eerste wielen verlaten Lopikerkapel. De structuur is fondant-achtig, smeltend. De smaak is fris, aards en boterig
De zoete tapenade is een huiscreatie van L’Amuse. Op basis van honing met dadels, vijgen, walnoten, gember en sinaasappel
