Het menu
Een mooie rauwemelkse Camembert uit Normandië, gevuld met een crème van eekhoorntjesbrood, eerst geweekt in de armagnac, aangezet met knoflook en sjalot. De smaak is pure herfst; umami all over.
Een prachtig zuiver geitenkaasje uit de Poitou. Een gebied met zuivere bodemgesteldheid en die smaak komt terug in de smaak van de ongepasteuriseerde geitenmelk en kaas. Lactisch gestremd ( Langzaam en op lage temperatuur) zorgt voor het strakke krijtachtige hart van de kaas. Fris, zuiver en licht geiterig met lichte citrustonen.
Normandische rauwemelkse roodflora. Wanneer de roodbacterie is ontstaan wordt het kaasje droog afgerijpt. Nu kan er een waasje witschimmel over groeien. De smaak is aromatisch, tonen van hooi en licht stallerig. Korstje kan wat zanderig zijn.
Een “alpage “kaas uit Zwisterland, gemaakt van melk van koeien die boven de 800 meter hoog in de bergen grazen. De melk wordt ongepasteuriseerd verwerkt, wanneer de kaas is geperst wordt de korst gewassen met een combinatie van witte wijn en Zwitserse kruiden als bij de Appenzeller. De smaak varieert van fruitig, floraal, nootachtig tot zeer aromatisch, met een tinteltje op de tong.
Van origine Schots, nu door wel drie producenten gemaakt in Nottinghamshire. De prachtige oranje kleur komt door anatto, een natuurlijke kleurstof uit het zaadje van de Orleaanboom. De doorspiezing is pas na enkele weken, zodat de kaas al een eigen smaak heeft ontwikkeld. Na een dikke 100 dagen is ze klaar voor consumptie. Structuur is fondant-achtig, de smaak is droppig, laurier en salmiak.
De vijgentaart met amandel is uit Menorca, gemaakt door een familiebedrijf. Pure geperste vijg en amandelen uit eigen boomgaard, geen toegevoegde suikers.
