Huisspecialiteit van L’Amuse. De beste Brie van de familie Dongé, 5 weken gerijpt, vervolgens gevuld met mascarponeroom, fleur de sel en verse zomertruffel. Bedekt met dezelfde paddenstoel en minimaal 24 uur gerijpt, zo neemt de Boeren Brie die toch al een zweem van truffel heeft, de intense smaak op. Puur in balans, verfijnd en verrukkelijk.
Ovaal geitenkaasje uit de Loire, waarbij de producent een takje rozemarijn ter decoratie maar ook om aan te geven dat de geitjes dit graag eten. De smaak is zeer toegankelijk voor geit, fris, met een bijna luchtige structuur.
Wel gezien als dè roodflora in de kaaswereld. Er zijn nog slechts twee rauwemelkse kaasboeren die deze kaas maken, in de Bourgogne. De korst wordt gewassen met een mengsel van gezouten water en Marc de Bourgogne.( een destillaat gemaakt van de druiven uit de Bourgogne) Bedoelt om te lepelen, maar nog meer om te verleiden! De smaak is intens, aromatisch en een tikje rokerig.
Een Comté van Marcel Petite, afffineur in de Jura. Melk van Montbéliarde en of Simmental koeien wordt verkaast en in plaats van drie weken op 18 graden gerijpt, direct naar het fort gebracht. Hier rijpen de 38 kilo wegende wielen langzaam op 11 graden. Tussen de 24 en 30 maanden verlaten de kazen het fort onder de naam Réservation. De structuur is ongelofelijk verfijnd en nog smeuïg. Fijne kristalletje beginnen zich te ontwikkelen. De smaak is licht zoetig, nootachtig, met tonen van toast, knoflook, kruiden en karamel.
Een blauwe schapenkaas van gethermiseerde melk. Afkomstig uit de hoogvlaktes van Malzieu, gemaakt op een coöperatie waar boeren zich verenigden om een andere Roquefort te maken. Een kaas met dezelfde blauwschimmelcultuur, maar waar eerst een korte rijping plaats vindt, voor de wielen doorspiest worden. Dus de kaas is steviger van structuur en steviger van smaak. Geen rijping van 5 maanden in grotten maakt dat ze minder zout behoeven dan hun voorvader. Lijkt dus stevig maar smelt in de mond. Licht zilt, met duidelijke schapenkaassmaak, en een bijna zoete toets van het zuivel.
De bijgevoegde vijgjes zijn Spaanse babyvijgjes, gekookt in rode wijn met specerijen en honing.
