Character: Very aromatic in large years, rich in scents of ripe candied fruit, honey, vanilla from wood aging. In addition to the full, lush sweetness, the wine has a remarkable freshness thanks to the fresh acidity that also ensures that the wine can age well.

Winemaking: Under the right conditions, the ripe grapes here attract a mold that thrives on the morning mist rising from the river. This fungus, the Botrytis Cinerea (pourriture noble), perforates the skin, concentrating the juice in the grape and making it very rich in sugar. The pourriture noble also gives the wine special flavor nuances and a lot of refinement. The harvest takes place in 4 to 5 picking passes, each time only the affected grapes are cut from the bunch. After fermentation, the wine matures for another 10 to 15 months, depending on the vintage year, in new oak barriques, wooden barrels of 225 liters.

Area details: Sauternes is the name of a small wine region of almost 2,000 hectares on the left side of the Garonne River. It is a relatively flat area, located about 40 km from the city of Bordeaux. The area includes 5 villages, namely Sauternes, Fargues, Bommes, Preignac and Barsac. The soil of Sauternes (slightly higher and hillier) contains a lot of gravel and in Barsac (which is allowed to use its own designation of origin for the 850 hectares of vineyard) often much more limestone. The most beautiful sweet wines in France are made here. A small river, the Ciron, runs through the area, which is important for the formation of botrytis. This special fungus develops in the warm, moist autumn and covers the ripe grapes through the morning mist. Due to the heat of the day, the fungi grow quickly, they perforate the peel, causing some of the juice to drain, leaving a high-quality concentrate of sugars and aromas and flavors. This process is called 'pourriture noble', or 'noble rot'. Dry white wines from this famous region must be sold as Bordeaux Blanc.

Producer details: Château Simon has been owned by the Dufour family since 1814. Both white and red grapes are planted on the 38 hectare vineyard. About 17 hectares are used to produce Sauternes. The remaining 21 hectares of vineyards are used for the production of white and red AOP Graves and white and red AOP Bordeaux wines. The soil here contains a lot of lime and clay with concentrations of gravel here and there. The average age of the vines at Château Simon is 30 years, with 6,000 vine plants per hectare. Since 1983, efforts have been made to reduce the use of pesticides and insecticides. There are now 3 generations of Dufour working in the company, and there is a lot of knowledge in the field of viticulture management and vinification. Anne-Laure and Pauline are the youngest generation who ensure consistently high quality for a very fair price at Château Simon.

Serve with: With rillettes, foie gras or duck liver, stews of white poultry and mushrooms, desserts of red fruit, peach, apricot, pear, crème brulée and classic soufflés.

Serving temperature: 10 to 12ºC

Other information: With prolonged rain in the autumn, the 'noble' rot can change into a harmful variant, the 'gray' rot. Then the harvest is lost, and in the worst case no wine is made that year. Wines from the AOP Barsac may also be marketed as AOP Sauternes. This is often done in exports because Sauternes is better known than Barsac.
